Ingredients
- 1 cup old-fashioned oats
- 2/3 cup shredded coconut (sweetened, unsweetened, or toasted)
- Make sure toasted coconut is cooled before adding to mixture
- 1/2 cup creamy peanut butter
- substitute with other nut/seed butters
- 1/2 cup ground flaxseed
- 1/2 cup semisweet chocolate chips
- substitute with butterscotch, vanilla, carob, or vegan chocolate chips (see below)
- 1/3 cup honey or maple syrup
- substitute with agave nectar, brown rice syrup, sorghum syrup
- 1 tablespoon chia seeds
- 1 teaspoon vanilla extract
- 1 dash of cinnamon (optional)
- substitute with Nutmeg, Allspice, Ginger, Apple Pie Spice, Pumpkin Pie Spice, Cardamom
Instructions
- Stir all ingredients together in a large mixing bowl until thoroughly combined.
- Cover the mixing bowl and chill in the refrigerator for 1-2 hours, or until the mixture is chilled. (This will help the mixture stick together more easily.)
- Roll mixture into 1-inch balls.
- Serve and enjoy immediately! Or refrigerate in a sealed container for up to 1 week or freeze for up to 3 months.
Notes
- Vegan chocolate chips are without dairy products like milkfat or dry milk powder such as milk chocolate chips and some dark and semi-sweet varieties
- Feel free to get creative and try different mix-ins such as raisins, or other favorite bite-sized dried fruits.
