No Bake Energy Bites

Ingredients 
  • 1 cup old-fashioned oats
  • 2/3 cup shredded coconut (sweetened, unsweetened, or toasted)
    • Make sure toasted coconut is cooled before adding to mixture
  • 1/2 cup creamy peanut butter 
    • substitute with other nut/seed butters
  • 1/2 cup ground flaxseed
  • 1/2 cup semisweet chocolate chips
    •  substitute with butterscotch, vanilla, carob, or vegan chocolate chips (see below)
  • 1/3 cup honey or maple syrup
    • substitute with agave nectar, brown rice syrup, sorghum syrup 
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla extract
  • 1 dash of cinnamon (optional) 
    • substitute with Nutmeg, Allspice, Ginger, Apple Pie Spice, Pumpkin Pie Spice, Cardamom
Instructions
  1. Stir all ingredients together in a large mixing bowl until thoroughly combined.
  2. Cover the mixing bowl and chill in the refrigerator for 1-2 hours, or until the mixture is chilled.  (This will help the mixture stick together more easily.)
  3. Roll mixture into 1-inch balls.
  4. Serve and enjoy immediately! Or refrigerate in a sealed container for up to 1 week or freeze for up to 3 months.
Notes
  • Vegan chocolate chips are without dairy products like milkfat or dry milk powder such as milk chocolate chips and some dark and semi-sweet varieties
  • Feel free to get creative and try different mix-ins such as raisins, or other favorite bite-sized dried fruits.
